Plant-Based Mexican Feast

I'm gonna cut straight to the chase. Here is a delicious combination of food that you can enjoy at any fiesta.

Homemade Corn Tortillas


  • 2c Masa Harina (Find it here)

  • 1 1/2c Boiling water


*Remember to always keep masa dough you aren't using under a damp towel or rag. Mix masa with hot water until well combined. When cooled, Knead dough until pliable. Cut dough evenly into the number and size of tortillas you want and roll each chunk into a smooth ball. Using a tortilla press and a Ziplock baggie, press each dough ball and place on a sheet tray lined with parchment paper as well as little sheets of parchment in between each tortilla. Place 2 tortillas at a time on a pan over very high heat. Flip each tortilla carefully after 45 seconds or until they are charred and have a slight change in color. If tortillas start to puff up they are ready. Continue this step until all tortillas have been pan-fried. Keep warm.

Plant-Based Taco Filling:


  • 1 lb. Carrots, peeled and roughly chopped

  • 1 lb. Mushrooms, roughly sliced

  • 1 Yellow onion, roughly chopped

  • 3 Garlic cloves, peeled

  • 3 tbsp. olive oil

For the spice mix:

  • 1 tsp. Smoked paprika

  • 1 tsp. Garlic powder

  • 1/2 tsp. Dried cilantro

  • 1 tsp. Chili powder

  • 1/2 tsp. Dried oregano

  • 1 tsp. Cumin

  • 1 tsp. Onion powder

  • Salt to taste


Using a food processor, pulse together garlic, onion, and carrot until evenly minced. transfer mixture into a bowl. Next, pulse mushrooms in food processor until minced. Combine the mushrooms with the carrot, onion, and garlic mixture. Coat a large pan with oil. When pan is hot, add the veggie mixture to the pan. Saute mixture until all water is evaporated from the veggies and the mixture turns darker and shrinks in size. Add spice mix to the pan. Salt your veggie mix until you are satisfied with the taste.



  • 1/4 of a Red onion, small dice

  • 1 Garlic clove, minced

  • 1 Tomato, insides removed and small dice

  • 1 Jalapeno, seeds removed and small dice

  • 2 Small avocados

  • Salt to taste

  • Lime juice to taste


Add diced veggies and avocados to a small bowl, Mix together until you reach a consistency you want. Add in salt and lime juice until guac is perfectly seasoned.

Mexican Martini:


  • 2 Shots tequila

  • 1 Shot cointreau or triple sec

  • 1 Shot orange juice

  • 1 Juice of a lime

  • 1 Shot Sprite or Canada Dry

  • 2 Lime wheels for garnish


In a shaker filled with ice, combine tequila, triple sec, orange juice, and lime juice. Shake together and pour into two separate glasses. Top with Canada Dry and lime wheel. Enjoy!
