Creamy Dreamy Bok Choy Noodles with Kimchi

I'm absolutely obsessed with sour flavors—from hot and sour soup to Takis, I'm all in. But I get it, not everyone shares my enthusiasm; sour can sometimes be a bit polarizing. So, when I set out to elevate a simple soba noodle dish, I knew adding just the right amount of kimchi could bring that perfect touch of tang without overwhelming the palate.


The result? A dish with a subtle bite that makes these noodles irresistibly delicious!


Substitutions

  • Feel free to swap the tahini for peanut butter if that’s more your style.


  • Bok choy can have a slightly bitter edge, so if you're not a fan of bitter flavors, you can easily substitute it with a milder leafy green like spinach.
